St. Kitt’s gave us a much-needed week of relaxation, a little bit of sunburn, and more drinks than we could have imagined.

Based on the length of this post (my apologies), you can obviously tell my passion for this country. I fully intend to fly “home” again and check out the many undiscovered parts of this land that I missed – do zobaczenia, Polska!

If my twenties taught me anything, it’s that life is about growing and changing, and no one is ever done doing either of those things.

Over the years I’ve gotten better and better at packing efficiently. Creating a checklist for my carry-on not only helped minimize the superfluous items that never failed to end up in my carry-on.

Is there a more magical city on earth than New York City? I had not yet experienced the magic of the city at Christmas time. So, we packed our bags and headed out for a fantastic weekend in Manhattan.

I can almost always talk my fiancé into anything, so when I broached the subject of a European getaway last fall, he quickly jumped on board. We ended up booking flights for Prague (and eventually Warsaw) so that we could – wait for it – take a day trip to Pilzen to experience the birthplace of the first pilsner-style beer. Who was I to say no?
